Belgian star restaurant Maison Collette moves to a new location with interiors by Grain Design Office
Maison Colette, the acclaimed Belgian restaurant, reopened on Wednesday, January eighth, in a beautiful new location. The extraordinarily acclaimed kitchen of Michelin-starred chef Thijs Vervloet was moved from its previous location at De Vijvers in Averbode to a strikingly grand, former doctor’s residence situated in Westerlo. An expanded offering is boasted by the new establishment, including a private dining room along with a boutique hotel.
Vervloet engaged the services of Grain Designoffice for the complete interior renovation. This project represented the firm's first foray into hotel interiors, charged with thoroughly integrating the customary kitchen essence throughout the restaurant while simultaneously reimagining classic grandeur within a thoroughly modern context. Collaborating intensely with Vervloet, the design team considerably enhanced the dining experience, precisely adjusting with his ambitious vision of redefining gastronomic excellence.
Chef Vervloet's move to Westerlo constitutes a return to his home; his residence is located within a relatively close proximity. A special experience is offered to guests by the transformation of the historic doctor's house; this experience includes a chef’s table, private dining, as well as a luxurious boutique hotel. Inspiration for the design was drawn from the chef's deeply classic culinary approach and Grain Designoffice's own large fondness for mid-century design, resulting in a space considerably enhanced by vintage elements and precisely considered details.
